I just got a Microsoft Natural Keyboard 4000 based on Vinny's recommendation and a few minutes trying out the stores models. It is indeed rather comfortable and very quiet. My only complaint is that I have yet to remap the 6 key from my right hand to my left so I keep typing 7.

I'm thinking about getting a quieter mouse now. My computer is right next to Amber's desk, and if I'm to have any hope of using it during the school year without annoying the crap out of her I need to quiet it down now.

Any suggestions on optical mice with quiet clicking action? I prefer scroll wheels to other middle options.

I'm unfamiliar with mouse-based acoustic testing.

A quick google search found this (sketchy?) link though:

Changing the search a bit revealed these threads/links:

Anything will work, but the clicks are loud even through a normal-thickness shirt, so a blanket or coat would probably be best.
