32 vs 64 bit color makes a big difference in gradients, particularly slow fairly dark ones. This shows up in 3d scenes with multiple render passes, or in Photoshop if you do a gradient over a large area. You, even as a non-artist, can definitely see the difference between 8 and 16 bits per channel.
